Directions
- Step 1: For the pudding custard
- Step 2: Combine water and gelatin in a bowl
- Step 3: Let it rest for about 7-10 minutes
- Step 4: Combine cream, milk and sugar and heat for a few minutes until all the sugar melts. Do not boil.
- Step 5: Take it off the stovetop and let it rest for about 5 minutes
- Step 6: Add gelatin mixture and stir. Add vanilla essence.
- Step 7: Pour mixture into small glasses at an angle. It's really rich so the smaller glasses will help reduce the serving.

- Step 9: For the mango puree
- Step 10: When you're ready to add the mango purée to the top of the pudding, you can then start the process of preparing the puree
- Step 11: Using a blender or hand help mixer, purée mango chunks/slices
- Step 12: Strain purée for a finer consistency
- Step 13: You can use puree as is or you can add some sugar for a little more sweetness
- Step 14: To make the puree like pudding
- Step 15: Add sugar to puree
- Step 16: Transfer to a stove top and stir until sugar is dissolved. Remove from stovetop
- Step 17: Add gelatin mixture and stir consistently
- Step 18: Remove chilled creamy custard from refrigerator and add mango puree mixture to the top of it
- Step 19: Chill for a minimum of 2 hours (longer is better)
- Step 20: Garnish with mint and small mango pieces and serve
