55 min • 4 servings

Ingredients

  • 300g Minced Beef
  • 300g Minced Pork
  • 1 chopped Onion
  • 1 clove peeled crushed Garlic
  • 1 Egg
  • 4 tablespoons Breadcrumbs
  • 1 tablespoon Mustard
  • 1 tablespoon Parsley
  • Pinch Salt
  • Pinch Pepper
  • Splash Oil
  • 2 sliced Onion
  • 1 tablespoon Butter
  • 1 tablespoon Brown Sugar
  • 2 tablespoons White Wine Vinegar
  • 2 tablespoons Mustard
  • 4 tablespoons Sirop De Liège
  • 1 cup Beef Stock
  • 1 Bay Leaf
  • Splash Beer

Directions

  1. Step 1: Make the meatballs
  2. Step 2: Mix the minced meat with the onion, garlic, egg, breadcrumbs, mustard, parsley, salt, and pepper.
  3. Step 3: Shape into meatballs. Traditionally, Liège restaurants serve **one or two very large meatballs**, depending on appetite.
  4. Step 4: For weeknight cooking, I keep mine smaller so they brown faster and cook through quickly.
  5. Step 5: Brown the meatballs
  6. Step 6: Heat butter or oil in a large pan.
  7. Step 7: Brown the meatballs on all sides until they have a nice crust.
  8. Step 8: Remove them from the pan and set aside.
  9. Step 9: Start the sauce
  10. Step 10: In the same pan, melt 1 tbsp butter.
  11. Step 11: Add the sliced onions and cook until soft and lightly caramelised.
  12. Step 12: Sprinkle in the brown sugar and let it melt into the onions.
  13. Step 13: Deglaze and add the stock
  14. Step 14: Add the vinegar and scrape up all the browned bits from the pan.
  15. Step 15: Stir in the mustard and Liège syrup.
  16. Step 16: Pour in the beef stock (and beer if using).
  17. Step 17: Add the bay leaf.
  18. Step 18: Stir until the syrup dissolves and the sauce looks glossy.
  19. Step 19: Simmer and adjust
  20. Step 20: Return the meatballs to the pan.
  21. Step 21: Cover and simmer gently for 25–30 minutes (less if your meatballs are small, longer if they’re traditional large boulets). Stir occasionally and let the sauce thicken naturally.
  22. Step 22: Taste and adjust: more syrup for sweetness, more vinegar for tang, more mustard for depth. The sauce should be sweet‑sour, rich, and velvety.
  23. Step 23: Serve with fries or mashed potatoes.
